Granola

img_4291Homemade granola is easy.

Line a cookie sheet with parchment. Preheat oven to 300 degrees F. In a large bowl mix a container of oats and a combination of nuts that you like. I use about a cup of sliced almonds and two handfuls of chopped pecans or walnuts or both.  Sprinkle in about a half teaspoon of salt and a tsp. of cinnamon. If I am feeling ambitious I add a finely chopped apple. Add in about ¼ cup brown sugar. Mix together with your hands.

Meanwhile, heat ½ cup virgin coconut oil with ¼ cup maple syrup. After the oil melts, and heat is turned off, add in a tsp of vanilla.  Mix this into oats. Taste. Add more brown sugar if you like it sweeter. If it seems dry, add more oil. Feel free to use olive or canola oil. Bake about 40 -50 minutes, stirring a few times. I turn off the oven and let it sit for a couple hours so the apples are not soggy and get nicely dried out.
