Homemade granola is easy.
Line a cookie sheet with parchment. Preheat oven to 325 degrees F. In a large bowl mix a container of oats and a combination of nuts that you like. I use sliced almonds. Sprinkle in about a half teaspoon of salt and a tsp of cinnamon. Add finely chopped apple (I use one or two honeycrisps).
Meanwhile, heat one cup of virgin coconut oil. When melted, remove from heat and add one or two TBS of maple syrup. If you want to eliminate syrup, you can squeeze in the juice of half an orange. Add in a tsp of vanilla. Mix these wet ingredients into the oats so they are coated completely. Taste. If it seems dry, add more oil. If I don’t have coconut oil I have substituted a mixture of olive oil with melted butter.
Bake granola about 40 -50 minutes, stirring a few times. I turn off the oven and let it sit for a couple hours so the apples get nicely dried out.
I store this granola in the refrigerator. It’s delicious atop Siggi’s plain or slightly sweetened vanilla yogurt. Blueberries add a wonderful touch.
